Mimi's Red Velvet Cake

Cake Ingredients:
·        1/2 c. Crisco
·        1 1/2 c. sugar
·        2 eggs
·        1 t. vanilla
·        1 t. salt
·        1 bottle of red food color
·        1 c. buttermilk
·        2 c. plain flour
·        1 t. baking soda
Preparation:

First, mix the Crisco and sugar together in a big bowl.  Next, add the eggs, vanilla, and salt.  After that, beat all of them together, and add the red food color, buttermilk, plain flour, and the baking soda.  Make sure that they are all mixed together evenly.  Then pour it in a 9x13 baking dish, but make sure you grease and flour the dish first.  Bake at 300 degrees ferinheight for 45 minutes.  Finally set it aside to cool.
We call our grandma Mimi.  It just seemed more appropriate to call her that.  Her personality was just too extraordinary to call her grandma or anything like that.  Grandma didn’t fit her out going, energetic, spunky style.  She is always in the kitchen, keeping herself busy by cooking.  There was always something going on in that house, but that is how they liked it.  I would be in the kitchen with her occasionally helping her with cooking things.  The smells of the cake baking would bring a smile to my face.  Thinking of all the wonderful times I have had with my family.
My family tree is a very long, broad, and healthy tree, but at the same time rare and compact.  I cannot even begin to imagine how much bigger my family is than how much I know already.  We have always been there for each other through good and bad times.  I am very blessed to have such a fun and trust worthy family like I do.  I know that a lot of people that don’t have that privilege.  We are all interconnected like a circuit board.  Like the ingredients of the cake.  They all make together to make something great.  Just the smell of the cake makes me think of all of this. 

Frosting Ingredients:
·        1 c. milk
·        ¼ c. flour
·        1 c. sugar
·        ½ c. Crisco
·        1 stick butter
Preparation:
Mix the milk and flour together in a bowl.  Next cook the mixture in a sauce pan on low until it’s very thick.  Set it aside to cool down.  After that, beat the sugar, Crisco, and butter together for at least 5 minutes.  Then add the flour mixture, which has been cooled, and beat for a couple of minutes.  Finally add the frosting to the cake and you have Mimi’s Red Velvet Cake.
The icing tops it all off on the cake.  It’s like the sweet ending to a story.  It’s the happy ever after at the end of a fairytale.  When we finish the cake all we can do is look at it in awe.  Smiling at each other, thinking of how good it will taste and the hard work put in to it.  More importantly, how family and friends will like it.  The cake brings us all together as a family to celebrate.  It wishes us for better times in the future.
